Veggie Waffle
Ingredients
For the waffles
250 grams cornflour
1 teaspoon vanilla extract
2 eggs
30 grams of sugar
2.5 tsp baking powder
0.5 teaspoon salt
50 grams of melted butter
250 ml buttermilk

2 boiled eggs
200 grams of mushrooms
200 grams spinach
1 tablespoon olive oil
20 grams of butter
Parmesan cheese
Pepper and salt
Preparation method
Warm up the greased waffle iron. Spoon some waffle batter on the iron and bake the waffle for 5 minutes until golden brown.
Saute the mushrooms, spinach and butter in a pan until well combined. Pour over the olive oil and spoon the mushroom mix onto the waffles. Cut the boiled eggs into slices and place them on the waffles. Finish them waffles with the Parmesan cheese and salt and pepper.
